Grilled Zucchini, Beetroot and Hummus Sandwich

A sandwich is not just a sandwich when it has homemade hummus on it. It’s an amazingly delicious and hearty sandwich. With zucchini, beetroot, mixed greens and two slices of Nurishh Provolone Style Slices layered on top of toasted bread, this sandwich will become one of your favs.

how to make

  • Blend chickpeas, garlic, lemon juice, tahini, 2 tbsp. olive oil and salt and pepper, to taste, together until smooth and creamy, add water if needed
  • Toast bread
  • Coat zucchini with olive oil and grill
  • Combine mixed salad greens with chopped parsley
  • Spread hummus on bread
  • Add beetroot, zucchini and 2 slices of Nurishh Provolone Style Slices

  • Top with mixed green and parsley
  • Close sandwich

  • 1/2 cup canned chickpeas, drained and rinsed
  • 1/2 clove garlic
  • Juice of half a lemon
  • 1 tbsp. tahini
  • Olive oil
