Vegan Mac and Cheese with Squash

Talk about comfort food that will feed your belly and your soul. Whole wheat macaroni squash and onions combined with Nurishh Cheddar Style Shreds and topped with breadcrumbs and even more plant-based cheese. It doesn’t get any tastier than our Vegan Mac and Cheese.

how to make

  • Cook macaroni according to packaging instructions
  • In large pan, sauté onion in olive oil
  • Add squash, vegetable stock and season with salt and pepper
  • Cover and cook until squash is soft
  • Add vegetable milk, mustard, nutritional yeast and 2/3 cup of Nurishh Cheddar Style Shreds, season and mix well
  • Stir in cooked macaroni and heat for a few minutes
  • Pour into a gratin dish and cover with remaining Nurishh Cheddar Style Shreds and breadcrumbs

finishing touches

  • Brown under boiler
  • Garnish with fresh chopped parsley
  • Serve and enjoy

  • 2 1/4 cups of whole wheat macaroni noodles
  • 1 onion, chopped
  • 2 tbsp. olive oil
  • 2 cups of ambercup or butternut squash, diced
  • 5 ounces of vegetable stock
  • 10 ounces of plant-based milk
  • 1 tsp. brown mustard
  • 2 tbsp. nutritional yeast
  • 2 cups Nurishh Cheddar Style Shreds
  • Salt and pepper to taste
